1 large yucca
1 can of salmon
1 teaspoon paprika
1 teaspoon garlic powder
A dash of dry rosemary
Salt and pepper to taste
1 Tablespoon coconut oil
To Prepare the Yucca Patties
. Then, grate it using a cheese grater and transfer to a bowl.
Now, open the can of salmon and strain the liquid solution. Transfer the fish to the bowl of grated yucca.
Next, add the paprika, garlic powder, dry rosemary leaves to the bowl, and season with salt & pepper. Mix well.
Divide the mixture into 6 equal parts and shape them to form 6 palm-sized patties.
To Cook the Yucca Patties
Step 1: Place a wide skillet on the stove over medium temperature. Drizzle the coconut oil (1 tablespoon) and let it warm up for 10-15 minutes.
Step 2: Add the prepped 6 yucca patties to the skillet without overlapping. Flatten each patty and cover with a lid. Cook for around 10 minutes on each side until golden. (*Covering the skillet with a lid helps cook the yucca patties faster)
Step 3: After about 20 minutes when both sides of the patties are golden, remove the lid, and let them crisp up.
Finally, once they are crispy enough you can take them out on a plate. Serve the crispy yucca patties with hummus and enjoy.
